Culinary Foundations

This 220 hour comprehensive culinary technique training a focus on a variety of topics including food photography, knife skills, different cooking methods and more.

Plant-Based Foundations

Created to build upon the strong culinary skills taught in the culinary foundation course.This is an opportunity to expand your plant-based knowledge and skills. This specialized training gives you or your team what they need to cook for and delight all their plant-based, gluten-free, and specialty diet diners.

Seafood Literacy

Learn the sustainable methods of sourcing, preparing and serving fish, shellfish, and sea greens. This is an advanced 15 hour curriculum where you will earn a certificate and 15 credits from the American Culinary Federation.

Waste Not

To combat this startling and untenable trend in food waste, the James Beard Foundation is focused on supporting an industry-wide change in the way our nation’s restaurants value and respect our food resources. Waste Not provides technical and creative approaches to food waste, and examines the need to reduce food loss along the entire supply chain
