Offered in partnership with the Agave Spirits Institute, features four progressive levels designed to deepen both theoretical knowledge and sensory expertise. From foundational tasting and production principles to advanced mezcal service, global agave exploration, and immersive fieldwork in Oaxaca, each course equips students with the skills and insights needed to excel as agave spirits professionals.

Introduction Course
Designed for both enthusiasts and professionals, this 2.5-hour Introductory Course offers a guided tasting of six unique agave spirits while teaching you how to assess aroma, flavor, and quality like a spirits sommelier. You'll gain foundational knowledge of agave history and production, and leave with a deeper appreciation for these diverse spirits—plus insights into whether certification is right for you.

Level 1: Certified Mezcal Specialist
This fast-paced course is ideal for both professionals and enthusiasts seeking to deepen their sensory analysis skills and expand their theoretical understanding of mezcal. Students will explore the Denomination of Origin, associated regions, tasting techniques, and food pairing concepts—all while developing a well-rounded appreciation of mezcal and related agave spirits.

Level 2: Certified Mezcal Sommelier
Seafood Literacy equips cooks with the essential skills to confidently source, prepare, and serve fish, shellfish, and sea greens. Developed with Chef Barton Seaver, this course teaches category-based cooking strategies and techniques like steaming, grilling, and raw preparations to build competence and leadership in modern kitchens.

Level 3: Certified Agave Spirits Advisor
Designed for Certified Mezcal Sommeliers who have completed ASI Level 2, the Level 3: Agave Spirits Advisor Course expands students’ expertise with a global perspective on agave spirits. Through in-depth theory, food pairing, and the guided tasting of 28 diverse expressions from Mexico and beyond, students will refine their sensory analysis and deepen their understanding of this complex category in a fast-paced, advanced learning environment.

Level 4: Master of Agave Spirits Diploma
Designed for Agave Spirits Advisors who have completed ASI Level 3, the Master Course is an immersive, week-long experience in Oaxaca that refines advanced sommelier skills and organoleptic analysis. With direct access to maestro mezcaleros, producers, microbiologists, chefs, and mixologists, students gain deep insight into Oaxaca’s mezcal regions and culminate their journey by crafting an original cocktail using professional sensory techniques.
